share two of our favorite recipes using this versatile green fruit thought vegetable. The first recipe is zucchini bread, affectionately called “pickle bread” at our house. The second recipe is a zucchini tomato bake that makes a wonderful side to all those end of summer meals.
Zucchini Bread
Mix and cream
together:
3 eggs
2 cups sugar
1 cup oil
Add:
3 cups flour
½ Tablespoon baking powder
1 tsp soda
2 tsp cinnamon
1 tsp salt
3 tsp vanilla
2 cups grated zucchini (I use up to 4 cups)
Pour into two greased and floured bread pans.
Bake 350’ for 1 hour
Zucchini Bake
Cut one whole zucchini into pieces
Cut an equivalent amount and size tomatoes
Cut up one onion (optional)
Spread in greased glass 9x13
Sprinkle with garlic salt
Top with shredded cheddar cheese
Bake at 350’ for 30 mins.
